Based on 1:16.7 ratio for Chemex. ~15% of water is absorbed by grounds.

Steps

  1. Setup

    Place Chemex filter with 3-fold side toward spout. Rinse thoroughly with hot water to remove paper taste and preheat the brewer. Discard rinse water.

  2. Add Coffee

    Add 30g of medium-ground coffee to the filter. Shake gently to level the bed.

  3. Bloom

    0:45

    Start timer. Pour 60-90g of water (95°C/203°F) over the grounds. Stir gently at 0:10 to ensure all grounds are saturated. Wait for bloom to complete.

  4. Main Pour

    1:15

    At 0:45, begin pouring in slow circles, breaking up any clumps. Continue until you reach 300g total water.

  5. Final Pour

    1:45

    Continue pouring until you reach 500g total. Stir once clockwise, once counterclockwise with a spoon.

  6. Swirl & Drawdown

    4:10

    At 2:00, give the Chemex a gentle swirl. Let the coffee drain completely. Target finish time 3:30-4:10.
